A couple of hiccups in the first weld photo but it looks like the selection (crop) in the second photo was the best example of what you can do.

I'd be tempted to run it just a bit hotter to reduce crowning but that's just me.

If you absolutely must have 120/240 then Everlast may be an inexpensive "entry level" MOSFET choice. Not the best, but good enough for occasional garage / farm use.

Sanding usually isn't enough. Use a grinder on both the work and the stinger contact points.

Turn up the amps until the rod starts. Usually, 6011 starts extremely easy compared to other rods.

First "help out" is to watch all of Jody's videos on this site for whatever process you are using or plan to use. Sounds like stick it the current choice.

The videos are the eyes for you to look through when you practice. If it looks like Jody's then you have it!

After all your experience you likely know that the slag produced by different rods behave differently. 6011 seems particularly offensive in this area. 7018 has the slag come off quite nicely if the welder's setting is right.
