Jeff,
Welcome to the forum.
That's nice work, only problem is now you're going to have a bunch of derilict welders (Steve) from La. coming to your place for food.
We have a few other custom metal melters on here as well that you can swap stories with.

Ohhhhhhh -- Taylor Ham, Egg and Cheese on a hard roll is one of the few things I miss about New Jersey. But, I don't miss it enough to live there again. Winters there are just too rough.motox wrote:nice set up but what the heck is jambalaya.

Nice stand, looks like a good time, and welcome!!
Re: winter. 5f is a heat wave as of late. We've only seen a positive number once in the last two weeks. -7 right now. This years been rough, and moving south looks better all the time.

It went up 26* here yesterday and still only made it to 11*, damn that's cold. Snowing here since 6am and expecting 5-8".
You're right, south is looking way better.

What about a chicken parmigiana? Crumbed chicken breast covered with a ham cheese and crushed tomatoes and baked until melted. Probably best drinking food ever made.

A bit late to reply, but the word "Jambalaya" I remember from the Carpenters song "On The Bayou".
I worked in Mississippi for a while a few years back. It was not uncommon to hear that term then.
I reckon real good Jambalaya would be pretty tasty

'Cause I got a bit carried away with Jambalaya, I found this (courtesy http://quezi.com/8645)
What is jambalaya?
Jambalaya is an easy-to-cook one-pot dish well suited to feeding a gathering. The basis of Cajun Jambalaya is meat—chicken, sausage or whatever is available. This is browned, then vegetables are added—onions, celery and green bell pepper (also known as capsicum). When this trinity of vegetables is softened, seasoning and stock is added and the whole lot is left to slowly simmer for an hour or more. It’s then brought to the boil and rice is added, being left to absorb moisture and flavor from the stock.
Could be yummy...

In New Orleans, and surrounding areas, you can buy (fresh or frozen) onions, celery, and bell pepper, under the name, "trinity".
