I keep ruining welds at the restart and at the end. All I have is a torch switch. Any advice?

Add an extra heavy dab at the termination when you snap off. Then, when you restart, light up on the dab, move forward a bit, then add filler. The extra dab works as filler to prevent the cratering, plus a “starter” dab when you restart.
