While tig welding stainless steel does it matter what material the table top is made from? (i.e. if it was made from mild steel, would it contaminate the stainless when it arcs?)

Keep a piece of aluminium or copper sheet to slide under the weld to stop the staino from sticking to the steel table.

Yes you can contaminate SS from sliding it against any mild steel. This includes the storage racks that most suppliers put the product on.
