Has anyone added a digital display for volts and amps to a machine without one? I haven't been able to find any videos or info about it, and I'd really love to be able to add it to my little 120v machine.

Anyone out there pulled that off before or have information on how to add it?

Pretty easy. Just look for a volt and/or ammeter that can be powered by a small DC wall wart power supply. Plenty on Amazon.
